Southwestern Hash Breakfast Plate

Breakfast for dinner anyone? Sometimes it's hard making a fancy breakfast when you have to be at work by 7:30 am! So I decided to make this yummy sweet potato & black bean southwestern hash for dinner tonight. With some Avocado Dressing to celebrate #NationalAvocadoDay!

Southwestern Hash Breakfast Plate

🔪 Prep Time: 10 minutes

🍳Cook Time: 10 minutes

🕒Total Time: 20 minutes

🍴Serving Size: 2


  • 2 Sweet Potatoes, cubed

  • 1/2 Onion, diced

  • 1/2 Green Bell Pepper, diced

  • 1 Zucchini, cubed

  • 15 oz Refried Black Beans

  • Handful of Spinach

  • 2 Brown Eggs

  • Avocado Dressing (recipe here)

  • Spices - Cumin, Chili Powder, Salt and Pepper


  1. Wash and prep all of your veggies. Cook in avocado oil for roughly 5 minutes.

  2. Season with all of your spices.

  3. Add in your spinach and cook for another 5 minutes.

  4. Cook your eggs sunny-side up and heat up your black beans in a small pot.

  5. Serve the sweet potatoes with eggs, refried black beans, avocado sauce and @tapatiohotsauce.

  6. Add more sliced avocado because you can never have too much!

  7. Garnished with fresh cilantro, hemp and sesame seeds.

Notes & Tips:

If you like your sweet potatoes softer, before cubing, pole holes with a fork and heat in the microwave for a minute.
