Who loves #TacoTuesday?! Still so obsessed with these grain-free taco shells by Siete Foods! I love me some delicious crunchy bites. Hope you’re celebrating the right way.

Crunchy Black Bean Veggie Tacos

🍳Cook Time: 10 minutes

  • 2 Crunchy Tacos (@sietefoods)

  • Refried Black Beans

  • Onion, sliced

  • Zucchini, cubed

  • Mexican Shredded Cheese (@heb)

  • 1/2 Avocado, cubed

  • Yellow Bell Pepper, diced

  • Tomato, diced

  • Baby Spinach, chopped

  • Salsa con Queso (@sprouts)

  • Spices - Chili Powder, Salt & Pepper


  1. Empty out your beans in a small pot, add some water and heat up for a few minutes. Season with your spices, to taste. Once fully warmed, leave of very low heat while you cook everything else.

  2. Prep all of your veggies.

  3. In a pan, sauté your onions and zucchini in EVOO until caramelized. Season with salt and pepper. Set aside or leave on very low heat.

  4. Build your tacos! In your taco shell, add in your beans, sautéed veggies, topped with freshly chopped bell pepper, tomatoes, and spinach. Add dollops of queso and sprinkle in some cheese. Serve with avocado on the side.
