Broccoli, Beans, & Quinoa Salad

I was in need of a quick dinner tonight so I made this 3 ingredient meal. Yes I repeat, THREE ingredients! Plus some seasonings of course but’s so simple and muy tasty. Also, these ingredients are packed with rich nutrients, vitamins, and lots of protein! Plus, it's vegan for all of my plant-based peeps out there.

Broccoli, Beans, & Quinoa Salad

🔪 Prep Time: 5 minutes

🍳Cook Time: 10 minutes

🕒Total Time: 15 minutes

🍴Serving Size: 2


  • 1/4 cup Tricolor Quinoa

  • ️1/2 cup Vegetable Broth (or water)

  • ️1/2 head Broccoli

  • 1/2 can (15oz) Black Beans

  • ️Spices - Chili Powder, Smoked Paprika, Garlic Powder, Ginger Powder


  1. In a medium pot, cook the quinoa in the vegetable broth (or water) until all liquid is absorbed.

  2. In a separate pot, fill with water and add in broccoli florets. Let the broccoli cook for roughly 10 minutes.

  3. Lastly, heat up the black beans in the microwave.

  4. Serve everything in a bowl and add in you spices.

  5. I topped mine with some cilantro and hemp seeds.

Notes & Tips:

I rarely measure out my spices so use your best judgement and preference when adding them in.
